Sorghum (Jowar/Jola) flour

Sorghum flours had higher protein (10.7%–12.3%) and less starch (72.0%–77.0%) compared with maize flour (6.7% and 81.0%, respectively), which was the reason for the poor expansion of extrudates with increasing level of sorghum.

Pearl Millet (Bajra) Flour

Bajra flour is made by finely grinding pearl millet. Apart from containing folate, magnesium, copper, zinc and Vitamin E, it is the nutty flavor of bajra that makes it so popular.

Wheat (Godhi) Flour

Wheat flour is a powder made from the grinding of wheat used for human consumption. Wheat varieties are called "soft" or "weak" if gluten content is low, and are called "hard" or "strong" if they have high gluten content. Hard flour, or bread flour, is high in gluten, with 12% to 14% gluten content, and its dough has elastic toughness that holds its shape well once baked.

Gram (Besan) Flour

Gram flour or besan is a pulse flour made from a type of ground chickpea called the gram chickpea. It is a staple ingredient in the cuisine of the Indian subcontinent. Gram flour contains a high proportion of carbohydrates, higher fiber relative to other flours, no gluten, and a higher proportion of protein than other flours.

All Purpose (Maida) Flour

All-purpose flour, also known as refined flour or simply flour, is made from wheat grains after removing the brown covering. It is then milled, refined and bleached. It is very common in Indian cuisine specially for various many Indian breads. It is commonly used in baking cakes, pies and other desserts.
